Pudding Pie

Tomorrow is Friday.  Here in Duluth we’ve had another rainy/dreary week which is so hard on a two-year old who just wants to “go outside, MOM”.  Instead of enjoying sunshine we’ve read books… lots and lots of books, cleaned house, watched some Mary Poppins, and best of all.. we made chocolate pudding pie.

If you’d like to try chocolate pudding pie.. Give this is a shot:

Preheat oven to 350.  Mix and pat into pie plate:

1/2 cup flour

1/2 stick softened butter

1/4 cup crushed pecans

Bake for 15 minutes and cool completely.  For second layer blend together:

1 pkg. (8 oz) softened Philadelphia cream cheese

3/4 cup powdered sugar

Gently stir in 1 1/2 cups Cool Whip topping; spread over crust.   In another medium bowl combine:

1 3/4 cups cold milk

1 pkg. (4 serving size) Jell-O Chocolate Flavor Instant Pudding

Beat until blended & starting to thicken.  Spoon over cream cheese layer and refrigerate several hours or until set.  Top with remaining cool whip and try to enjoy as much as Jameson did!
